It is made of USDA Choice and higher beef - rounds, to be precise - and it is perfect for making lean burgers, meatloaf, meatballs and any other dish where having a little less fat is ideal. It is also perfect for all of our customers who like to make their own jerky and sausage. Experienced jerky makers are acutely aware of just how important it is to start with a very lean meat block to achieve proper consistency.
