Kanetsune Medium Gyuto Knife 13 1/8in. KT102. A clever rearing away from the typical "fletching" knife the secret to this one is in the blade. While it has some similarities to a traditional chefs knife this one was developed for chefs at Japanese and French restaurants where chefs need a quick non-cutting tool. This high-grade Gyuto can cut through soup bones and even bone and cartilage to prepare delicious meals fit for a king. While small in overall length the secret to this one is in the blade. While it has a slightly broader and thinner blade than a traditional chefs knife the damascus provides excellent cutting performance and the non-rusting blade provides excellent protection against corrosion. The secret to this one is the exceptionally sharp blade which utilizes our proprietary VG-10 powdered steel. An acid resistant blade which can withstand many types of corrosive environments is resistant to rusting. While a synthetic handle stabilized by black wood provides a non-slip grip.
